POSTDOCTORAL ASSOCIATE FISH PROCESSING, SENSORY ANALYSIS AND FOOD TECHNOLOGYFish for Health Research Nucleus has a scholarship available for postdoctoral. The scholarship has a workload of 40 hours per week, lasting 25 months. The project will be conducted at the Advanced Center for Marine Fish Research linked to the Fisheries Institute, in Santos (SP), under the supervision of Researchers Cristiane Rodrigues Pinheiro Neiva and Thais Moron Machado.
Task:Develop low-cost ready-to-eat fish products (meatballs, sausages, medallions, hamburgers, and canned fish) based on processing waste, through mechanically separated meat technology (CMS) in addition to extending the shelf life, market value, and acceptability.
RequirementsQualifications:• Training in the area of food technology with experience in fish processing, sensory analysis, market research, shelf life studies, R&D, tabulation and data analysis;
• Must know English and/or Spanish;
• It is desirable to have a doctorate less than 7 years ago.
• Availability to travel;
• Live or move to Santos-SP, Brazil.
